Ammos Brighton Awarded Coveted SMH Good Food Guide Hat

Ammos Brighton has earned a prestigious one‑hat in the 2025 Sydney Morning Herald Good Food Guide mere weeks after its debut. This accolade marks an exceptional milestone for the restaurant and the Oscars Group, receiving its first hat across the portfolio.

Located on the third level of the newly renovated Novotel Sydney Brighton Beach, Ammos Brighton offers sweeping views of Botany Bay in a stylish setting. Inspired by coastal elegance, the venue showcases a thoughtful redesign by Paul Papadopoulos of DS17, delivering a modern, bright and inviting dining environment. This signature Greek restaurant, launched after extensive refurbishment, seats 160 and features both indoor and outdoor spaces, including a standout seafood station and mezze bar.

Ammos’ menu has been curated by acclaimed chef Peter Conistis, whose culinary lineage spans more than 30 years across Sydney’s top Greek restaurants. Conistis brings a refined take on traditional Greek cuisine, combining family‑inspired heritage with contemporary techniques. Highlights include shellfish saganaki, fire‑roasted whole lobster with a la Grecque butter, aged pork brizola with apple tzatziki and a rich scallop moussaka—dish staples carried throughout his career.

He is supported in the kitchen by Executive Chef James Roberts.
